Didn't Isaac Howard make a big deal about returning to MSU last year before he signed over the summer? Feels early to draw any conclusions.
IIRC that was something the best player in all of college hockey did as leverage to force the team that drafted him to trade him. That's not the norm.

For schools with money, you are starting to see their ability to pay some $$ causes players to pause about going to the AHL for $80k. This is of course very new - and too early to make widespread conclusions - but pretty sure that is the case with the UConn players and Michael Hage at Michigan. As with everything, there are many factors at play, and individual preferences.  Stanley was a full tuition student - no grants, academic aid, etc... - so no one has any issue with him signing a pro deal when Cornell isn't even allowed to give him squat.

Can you post links to the data? I spot-checked one of your inputs (2024) and it was very wrong. I have no idea if this one is complete either, but the USCHO page for 2024 early departures lists 37 players: https://www.uscho.com/pro-signings-by-ncaa-hockey-players-2024-offseason

EDIT: I also checked 2023 on USCHO and that listed 39 players, so once again your number is wrong.

When a player jumps to the pros, does he sign a guaranteed contract for the full season?  Pro-rated for the games remaining?  Do they get dental?  Are playoffs extra money?  I assume players are not ICs like golfers -- they don't have to pay for their own transportation, lodging, equipment, etc.  Do they get a per diem for food?

they get all of the above
playoffs aren't paid for under the contract's money but there's a playoff "pool" that pays out for playoffs. also, pretty sure a lot of nhl teams pay under the table for it anyway.

if you sign an ELC starting this year, the SB is paid in full, the money of the general contract i think is prorated though.

and yeah, as adam said, you get your stuff paid for and a per diem to graze with.

IIHF U-18 World Championships

To the best of my knowledge there are no Cornell commits, or ECAC commits on the teams. They are on NHL Network or TSN.
