Anyone notice the vast majority are from the late 80s?  Any reason why that time period happened to produce so many?

In the late 70's and early 80's, additional expansion & WHA integration created a demand for more players.  The USSR and Czechoslovakia weren't freely exporting players yet, so the early 80's are when the NHL finally started to draft college players in numbers.  Give them some time to mature and voila!

Moulson (33) closing in on Kent Manderville (37) for second all-time in NHL goals among Cornell hockey alumni.  After that he'll have a little bit of work.
