BU's (1973-1977) Ricky Meagher had a pretty good NHL career. Won the Selke Trophy in 1990.
Brown's Curt Bennett had two 30 goal seasons among his ten or so NHL years.
RPI's Joe Juneau is approaching 600 career NHL points in thirteen seasons.
Sucks' Ted Donato has 347 points over his career, including 54, 51 and 49-point seasons. I don't think he falls under the category of "best", but that's certainly respectable.
Joe Mullen (BC) was an outstanding college and NHL player. He, Joe and Oates should be the first line of NHLers who were ECAC players.
Craig Conroy (Clarkson) centers Calgary's first line and is a real solid player.
Jack O'Callahan (BU) was a decent NHL defenseman for about eight seasons, mostly with Chicago.

Just some added info on Meagher....in '76-77 he was (in this reporter's opinion) the standout on a great BU line with future Olympians Mike Eruzione and Dave Silk. O'Callahan and Jim Craig were also on that team.

The depth at forward is far better than at the other positions. If I were coaching this team, I would want Rod Langway to play at least 30 minutes each game. I'd also play mind games with Mike Milbury to extract revenge for his stupid trades. If Zneda Chara wins the Norris Trophy, I'd scratch Mad Mike out of spite.

Zdeno Chara should def. be in their and Eric Cole should get an honorable mention, he isn't a big stats guy but he greatly helps his team every game

Forgive my ignorance, but which ECAC team did he play for?
Zdeno Chara played junior hockey with Prince George. The closest he ever got to the ECAC was a straight A average in junior college (equivalent to a Harvard honors degree).
I omitted guys like Jeff Halpern, Todd White, and Erik Cole because, in my opinion, they have not had careers as good as the players who have retired or are in their sunset years of their careers. Martin St. Louis is the obvious exception, which he earned with his Hart Trophy nomination. The other younger guys may earn spots on my list, but they have not done so yet. It's the same concept of a great, young player not having earned a spot in the Hall of Fame despite being on a trajectory to get there.
