I want to watch:
+ College Hockey
+ MLB
+ F1
+ World Cup
+ Olympics
+ WJC
I do not particularly care about anything else.
What do?
Spend a lot of money? 8)
Helpful.
Sail the seven seas?
But I mean... what out of those does ESPN not carry? I think it has most of them, right?
I prefer Hulu Plus Live TV. $90 per month for the service with ads. Only thing you won't get is the World Juniors but I understand (have not done too much research on this) that Sling includes the NHL Network and offers a daily pass for $4.99.
This is probably more than you are looking to spend (not to mention more content than you need) but unless you...ahem..."yo ho ho" I don't know that cheaper, more focused alternatives actually exist.

Annoyingly, the FIFA World Cups are on Fox these days and I've never been able to get that without signing up for some pseudo-cable package like Fubo or YouTube TV.

FoxOne is a streaming app that might be helpful. I used it to watch the baseball ALCS this last fall.

Isn't Hulu being folded into Disney?

Yes, but odds are that the Hulu live TV product isn't going away, neither is the Hulu brand. Just that you're going to access Hulu content within the Disney+ app. Keeping the Hulu brand means that they can have more adult-themed content without diluting the family-friendly cachet of the Disney label.
Putting it all inside one app will just make the lines go up for investors and consolidate their data mining.
